'I have been Executive Chef at The Granary Hotel and Restaurant for over eight years now and believe we have a very exciting offering here. We’re famed locally for serving ‘the original and the best’ Carvery lunch and for our superb À La Carte and Table d’Hôte menus.
Food is my passion and the more I understand about the chemistry of cooking and the perfect fusion of flavours; the more I enjoy it. Today there is too much emphasis on convenience food and people forget about the basics, which are so important in producing good quality food. The number of ‘food miles’ that our ingredients travel before they reach the plate is kept to a minimum and buying locally also allows for seasonal variety in the menu. I generally begin my day with a trip to the Birmingham food market at 4am!
I am also a great supporter of our local farmers and producers and include their produce wherever I can in our menus; including local beef from Hagley butcher Phillip Paddock, goats’ cheeses from St Michaels Farm in Great Witley and duck from Bakewell.In this way The Granary is not only supporting our local economy, but we also ensure the freshest produce, of the highest quality for our guests.
I am passionate about learning and am part of a pioneering Food Preparation Degree course at the University of Worcester.I also actively support my team’s continual development and have implemented plans for them all to visit Michelin star rated establishments, helping them to be the best chefs they possibly can and observe The Granary’s tradition for exceptional quality food.'
